KimChi and I have an "on-and-off" relationship, and it has been "on" of late due to my taste buds craving for something spicy. Not that I needed anymore spicy stuff in my life!
Back to the food. I found a pretty fast and simple recipe to share, see the link from Youtube. The difference is that my Kimchi version was made with a lot of Daikon radish, because I like the crunchiness. Additionally, I tripled the amount of green onions and garlic because they are good for you! I don't follow recipes well because of my biased nature towards some food so I tend to over indulge a little.
As you can see I made enough Kim Chi with Daikon for the whole village...so, come and get some! Truthfully, besides me and my older son - on occasion, no-one else likes Kim-Chi in my family. I made extras for my nephew and my sister from Santa Barbara, otherwise as much as I had made, it would take me more than a year to consumed.
