Suddenly Tasty Salad

My kids have always liked the Suddenly Salad from the box and we would stock up every time I go to the grocery store. But for some weird reason this item keeps going up in price and I get frustrated every time I see the price increase.
So I decided to not support the price increase and make my own Suddenly Tasty Salad. I made the dressing from scratch, and added salami for fuller body. It's quick and delicious for lunch and not too messy. The kids love it and as long as the plate is empty, I am happy.

Ingredients: 1 carrot, 1/4 lbs of salami, sweet basil, green onion, olive oil, and pasta.
*Chop the carrot in half moon shape, slice the salami, cut the green onion, and mince the basil leaves and set them all aside.
*Boil the pasta and rinse with cold water, and set aside.
Dressing: 1 tablespoon extra virgin olive oil, 1 pinch of salt, and three sprinkles of pepper. Stir until the ingredients are all dissolved. Add pasta, carrot, and salami and mix well with wooden spatula. Garnish with green onion and sweet basil. Simple and tasty for your very picky eaters.

  7. I have walnuts, baby spinach, and a raspberry walnut vinaigrette dressing. What kind of fruit (or other ingredient) would be good to add to make a simple yet tasteful salad?

  12. Yummy! I happen to have some salami that we have grown a little tired of using for sandwiches. I would ever have thought to make a pasta salad with it. I love this idea!!
