Summer is a time for fresh, cool, and light eating. Cucumber have all three of these components including the clean taste, making them the perfect candidate in cooling down the heat. Sometimes even my favorite Happy Hour appetizers can't hold the candle to my craving for the crisp and healthy Cucumber Salad.
Although the prices at Happy Hour is quite enticing. The guys at the Fish Market restaurant know us well. Sometimes at minutes before Happy Hours is over, they would enter all the selections that we would normally order so that we could get the Happy Hour prices. But like I said, when you have a special craving, nothing can compare to the food you are hungry for.
Cucumber is a good dietary food as well if eaten raw and peeled. It practically has nothing - no fat, just about 2% of fiber for every half size cucumber. So, if you are still trying to get in that bikini, give this easy Sweet and Sour Cucumber Salad a try, it could turn into one of your summer favorites too.
Ingredients:
1 English cucumber, or 3 little cucumbers. Sliced 1/4 in widths rounds and cut again into four pieces turning them into chunks.
1/2 medium size red onion - cut the half into 1/4 slices
24 stalks of cilantro - cut into 1/2 inches.
4 12-inch stalk of peppermint
The dressing:
1) Mix 4 tablespoons of vinegar, 5 tablespoons of sugar and 3/4 teaspoon of salt.
2) Heat until sugar completely dissolved. Remove from the heat and allow to cool.
3) Arrange sliced cucumber and red onion in layers in a bowl. Garnish or mix the cilantro and peppermint in last. Pour the mixture in the bowl of cucumber and serve.
